Cauliflower Mash “Potatoes”

Ingredients

  • 2lbs fresh or frozen cauliflower
  • Organic Chicken broth
  • Salt and pepper
  • Garlic powder
  • 2 Tbsp. Coconut oil

Instructions

  1. Boil cauliflower in chicken broth until tender. Strain and put back in pot and add coconut oil and garlic powder, salt and pepper to taste. Using a hand mixer, beat until smooth and creamy. You could add crumbled up bacon and chives to the top.
