Paleo Cornbread


  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 T baking powder
  • ½ t sea salt
  • 3 eggs
  • 2 T honey
  • ½ cup buttermilk or full fat coconut milk
  • 2 T melted ghee or coconut oil or organic bacon fat


  1. Preheat oven to 350°F.
  2. Grease a square baking pan or 10 inch cast iron skillet with coconut oil, ghee, or organic bacon fat.
  3. Combine the flours with the baking powder and salt in a bowl. In a separate bowl, whisk the eggs with the honey, buttermilk, and the fat you are using. Add this to the dry ingredients and whisk until combined.
  4. Pour into the prepared pan or skillet and bake until a toothpick inserted in the center comes out clean, about 15-18 minutes. Cool before cutting and serving.
